Fresh yoghurt is one of the healthiest drinks around, yet very few people consider making it at home. One would easily find it to buy in shops and supermarkets. Making fresh yogurt at home is rather simple and need just a few ingredients and some time and patience.
Here’s what you will need and a step-by-step guide:
Ingredients:
- 1 liter (about 4 cups) of milk. Whole milk makes creamier yogurt, but you can use 2% or skim too)
- 2 tablespoons of plain yogurt (with live active cultures – check the label)
- Some sugar
- Flavor (Vanilla/strawberry)
Guidelines:
1. Heat the Milk
- Pour the milk into a saucepan.
- Heat it until it starts steaming and just starts to foam.
- This helps kill any unwanted bacteria and changes the milk proteins so they set as yogurt.
2. Cool the Milk
- Let the milk cool down– warm but not hot. (You can speed this by placing the pot in a cold water bath.)
3. Add the Yogurt Starter
- In a small bowl, mix 2 tablespoons of plain yogurt with a little of the cooled milk.
- Whisk that into the rest of the milk.
- Make sure it’s evenly mixed.
- Add your preferred flavor
- Add sugar to taste
4. Incubate
- Pour the mixture into a clean container.
- Cover it and keep it for 6-12 hours
- You can cover it with a kitchen towel and keep it in a dark area
